Tuna Pasta Bake – A mid week favourite

This is such an easy recipe perfect for lunch or dinner.

We enjoy it as a family.

Ingredients

Tin of tuna
Tin of sweetcorn
Dried pasta for 4 people
Cheddar Cheese

For the sauce – I usually double the quantity
15g butter
1 tablespoon plain flour
150ml milk
50g cheddar
Method
Cook the pasta as on the label – I usually remove a couple of minutes so its a little al dente as it is going to go in the oven as well.

Make the cheesy sauce for the pasta

In a small saucepan, melt the butter and add the flour to create a roux

Add the milk slowly whilst still on the heat and stir continuously until the sauce has thickened.

Remove from the heat and stir in the cheese.

Strain the pasta, and add the drained sweetcorn and tuna then stir in the cheese sauce.
Transfer to an oven dish – sprinkle with a handful of cheddar cheese and bake for 20 mins until the cheese is browning and its all bubbling nicely.

Serve with a nice salad or some cucumber and tomato for your toddlers.

Note: You can add any vegetables you want – so you could add cooked brocolli or courgette into the pasta before placing in the oven.
