Egg Fried Rice Recipe (with Chicken)
If you have had a roast chicken last night (or any other meat) then this is a great way to use leftover meat for a tasty Sunday lunch.
Leftover meat – we used chicken. For older toddlers you can use prawns.
Boil the rice as per the packet instructions.
Add diced carrot to the boiling water for 10minutes and a few minutes before the rice finishes add the frozen peas.
Heat some butter in a Wok. Add the rice and stir. Add the vegetables and the shredded (already cooked) meat.
When it has been frying for a few mins and some of the rice has started to brown – move the rice over to one side of the pan.
Whisk the two eggs in a bowl then add them to the empty side of the wok and mix to make scrambled egg.
Once cooked mix the egg into the rice and add soy sauce to taste.
