Chicken and Sweetcorn Soup

Soups a bit of a funny one but surprisingly most kids love soup.  it was never something I thought to try with my daughter until nursery told me (quite a few times) how much she loved it.  I was surprised as it wasn’t the sort of thing I could imagine her eating, but low and behold they were right – she loves soup.

And yes it can be messy but this is a nice dinner option as it is full of goodness that will fill them up as well.

Ingredients

2 chicken breasts
1 small onion
2 potatoes
1 can of sweetcorn
1 can of creamed corn
Chicken Stock
Herbs and seasoning (as required)

Method

Slice the chicken up into small chunks

Place the chicken along with the potato (cut into small cubes) into a pan of water bring to the boil and simmer for 10mins to cook the chicken and soften the potato.

In a separate soup pan fry off the onion until soft

Add the cooked chicken and potato ( I like to shred the chicken into smaller bite size pieces at this point)

Add the can of sweetcorn (drained) and the can of creamed corn and some water with chicken soup

Simmer until all combined and cooked through (15mins should be sufficient) and add herbs and seasoning as desired.

 

Serve on its own or with some homemade croutons or crusty bread.
